During white wine production, we pay particular attention to the pre-selection process. The healthy grape material is carefully harvested by hand or with mechanical harvesters. The grapes are gently crushed at a maximum pressure of 1.5 bar, and the must is left to settle overnight. This is followed by a monitored fermentation process. The new wine is then left to age sur lie, where it develops its typical character and aroma.
